Miss Natalie Favorite Sausage & Pasta

When our niece Miss Natalie was a student at USF this was her favorite. When she said she was coming over for dinner we always planned on 2-4 of her college friends coming too.  Today her friend, Seth still calls us “The Uncles” but we now call him ‘Doctor’!!! LOL
1st under cook pasta ( we like shells) about 6-7 minutes and return it to the big pot & covered. (See the M&C pasta Tip)
2.  On top of the stove in a very large frying pan put a little oil, smashed garlic & 1 chopped onion – cook a little.
Add 1″ cut up links of sweet Italian sausage & brown.  Then add 1 can chicken broth & package of frozen chopped broccoli and re- heat.
3. Pour mixture over pasta cover & let sit 10 minutes.
Serve with side salad, bread, parm cheese & give advice to your niece & nephews.  As if they will listen to you!!! LOL LOL
This recipe is easy to increase serving just by adding more pasta or sausage. We have done it many times and is a great comfort food!

Left Over Turkey Balls

With left over Thanksgiving Dinner meal.
Mix together stuffing, veg’s, turkey or chicken, 1/2 cup mayo, 1 stick soft butter, 1 egg beaten,  mix all together well and cool.
Form into balls and roll in flour and cool again
Next roll in beaten eggs then breadcrumbs
Fry on all sides lightly & then bake on 350 over 20-25- minutes.
Serve with gravy.
We make extra & freeze to have for lunch later at work.

True Romanian Goulash

 

My Grandmother from Romanian used to make this. She used a big pot on the stove. Today we use a crock pot. We think Grandma would approve. LOL
Equal parts meat to onion
Cut 3 lbs onions & put into crock pot
Next cut up 3 lbs of Beef or Chicken into cubes
Grandma always used a brown paper bag next but a plastic one actually works better. Into the bag add 1/2 cup flour, 1/4 to 1/2 paprika, salt & pepper.
Add your chicken or beef cubes to the bag and toss to coat.
Then put into crock pot over the onions.
Cook on high 3 hours or low 6-7 hours.
Serve as is or over noodles with optional sour cream

Edwin Bjorkman’s Famous Party Spread

 

When Edwin divorced his wife Bunny, she refused to give him this recipe!!! So several years later Edwin had his kids ask for it!!  When ever we make this today, we always toast Miss Bunny!
One jar orange marmalade.  Remove 2 Tbls and replace with 2 Tbls hot horseradish sauce and couple dashes of worcestershire. Stir & leave in ref over night.  The next day bring it to room temperature and pout it over a room temperature brick of Philadelphia Cream Cheese. Serve with crackers.

M&C Black Olive Topinaud

Into your blender put…
1 or 2 cans drained black olive
1 small jar drained green olives
2 Tbls cappers
1 can anchovies with oil
1 smashed & chopped garlic clove
2 Tbls lemon juice
Rough blend with pulses
Server over toast  or crackers
can be made way in advance

India Shrimp

First marinade 1# shrimp with M&C Secret Marinade.
In a coffee grinder 1 Tbls mustard seed &1 Tbls Turmeric Blend together.
Put into a small bowl. Mix in 1 Tbls oil then toss with shrimp.  Let sit for 20 minutes. Optional add 1 small chopped sweat onion.
Place the small bowel with a small cloth under it into a steamer and stream 10 – 15 minutes.
Serve over cooked rice.  Jasmine rice is especially good.

M&C Secret – The BEST Shrimp Marinade of all time.

We use this marinade before almost every shrimp dish!!! Peal & devein the shrimp.  We like to cut the shrimp from the head 1/2 way to the tail. When cooked they look bigger & way more festive.
Next the marinade… Are you ready for this????  Pour over the raw shrimp 1/4 to 1/2 cup of kosher salt. Then rub mixture between your hands. Let sit for 15 – 25 minutes.  Rinse well 6 – 8 times. Then your ready to cook.
After cooking the shrimp will pop in your mouth with flavor. The only restaurant that we have ever found that uses this marinade is the Laughing Cat in GaYBOR/Ybor City.
THIS WILL BE YOUR ALL TIME FAVORITE!!!

Mussels in Wine

In a large pot 2 Tbls oil, chopped garlic 2 Chopped onions & cook.
next add 2 large chopped onion &2 tomatoes, 1 sm can tomatoes past & 1/2 bottle red wine – bring all this up to a simmer.
Add 1 package cleaned mussels about 2 -3#’s. Cook until all are open.
Stir-Mix 2 Tbls cornstarch with 1/4 cup wine to make a slurry then add to mixture.  Optional add fresh mushrooms.
Serve as is or over noodles. With the second 1/2 bottle of wine.
We also like to add fresh chopped cilantro just before serving.
The first time we had this Carrie gave it 4 stars right away. Mark opened a second bottle of wine for desert!!!

Easy Grill Vegetables

This is way to easy.
Start your grill & put on a vegetable grill pan. Or you could put some foil on the grill & poke some holes.
In a large vip lock bag add 1/2 cup olive oil, seasoned salt  3 Tbls balsamic vinegar.  Cut your veg’s into thick 1/2″ slices & into bag toss and let sit 15 – 30 minutes.
We have done this inside on the stove top with a grill frying pan too.

Low Fat Alfredo Pasta Bow Ties

1 Tbls oil into frying pan, add chopped garlic & onion saute until translucent. add 1 can evaporated skim milk. Stir non-stop. When hot add 1 tsp tarragon, “Over Night Yogurt  Cheese” (see below) , 1/4 cup low fat swiss cheese & graded parm cheese.
Pour mixture over cooked past & add squeeze  of lime juice.
This is low fat and tastes like Alfredo. Can add cooked chicken & vegies
“Over Night Yogurt Cheese”
Put one small container into a coffee filter and then into a strainer then over a bowl. Leave in ref over night.
Can be used is so many different recipes.
