Great Fun Recipe! Pony Tails

Our Crazy Fun Sister, Cheryll told us about a new recipe called, “Pony Tails”. We had such fun making this. First you take 2 inch pieces of Italian sausage or jumbo hot dogs. Then push spaghetti thru them & cook in boiling water. We used sweet Italian sausage. In a large frying pan we made one of our favorite sauces. 4 Tables spoons olive oil and 4 tables spoons butter. Saute 1 large sliced onion and some garlic. Then add 1 cup white wine, 1 cup chicken stock & 1 large bunch of kale chopped up. Bring to simmer and reduce liquid in half. Drain the pasta with sausage then return to cooking pot. Pour the sauce over the drained pasta, cover & let sit for 10 minutes. The pasta will absorb most of the liquid. Add a bit of cheese,

Great Pasta Sauce

Cut 6 plum tomatoes in 1/2 and place on cookie sheet. (You could also add & cook, onions, mushrooms etc at this point.) Drizzle olive oil & salt then bake 20-30 minutes at 350 degrees.   Remove and put in food processor and chop. Use just as is or add……..
We made this one time for our Sister Flora & the kids. At the end we added a bag of mix seafood. The kids are still talking about how strange this was.  LOL LOL

M&C Pasta Tip for 2

Cooking past for two is hard & boring.  Get a large gallon jar or cookie jar. Then go out & pick up several types of pasta. Bow Tie, Spiral, Shells, Twists etc.  Mix them all together.  Then when you want to cook pasta for 1 or 2 scoop out just enough. Remember past doubles in size when cooked. No more wasted pasta.

Miss Natalie Favorite Sausage & Pasta

When our niece Miss Natalie was a student at USF this was her favorite. When she said she was coming over for dinner we always planned on 2-4 of her college friends coming too.  Today her friend, Seth still calls us “The Uncles” but we now call him ‘Doctor’!!! LOL
1st under cook pasta ( we like shells) about 6-7 minutes and return it to the big pot & covered. (See the M&C pasta Tip)
2.  On top of the stove in a very large frying pan put a little oil, smashed garlic & 1 chopped onion – cook a little.
Add 1″ cut up links of sweet Italian sausage & brown.  Then add 1 can chicken broth & package of frozen chopped broccoli and re- heat.
3. Pour mixture over pasta cover & let sit 10 minutes.
Serve with side salad, bread, parm cheese & give advice to your niece & nephews.  As if they will listen to you!!! LOL LOL
This recipe is easy to increase serving just by adding more pasta or sausage. We have done it many times and is a great comfort food!

Low Fat Alfredo Pasta Bow Ties

1 Tbls oil into frying pan, add chopped garlic & onion saute until translucent. add 1 can evaporated skim milk. Stir non-stop. When hot add 1 tsp tarragon, “Over Night Yogurt  Cheese” (see below) , 1/4 cup low fat swiss cheese & graded parm cheese.
Pour mixture over cooked past & add squeeze  of lime juice.
This is low fat and tastes like Alfredo. Can add cooked chicken & vegies
“Over Night Yogurt Cheese”
Put one small container into a coffee filter and then into a strainer then over a bowl. Leave in ref over night.
Can be used is so many different recipes.

Low Fat Spiced Chicken with Spinach & Noodles

Into coffee grinder whole pepper corns, salt, cloves, all spice, red pepper, sun dried tomatoes. GRIND all
Start to cook some egg noodles now.
4 chicken breasts. Put ground spice under skin and both sides. Brown in 1 tsp olive oli skin side down about 10 minutes. Remove & cut up.
Back into fry pan 1 can chicken broth, reduce & add 1/2 cup parsley, chopped pimentos & 10 sun dried tomatoes that had pre soaked in boiling water.
add 1 Tbls arrow root or cornstarch  & splash of wine.
Into a soup kettle put 4 cups chopped fresh spinach. Put cooked noodles over and cooked chicken with sauce.  Let all set for 5 minutes to cooks spinach.
Toss and serve with a sprinkle of ground spices on top.
