Sister Cheryl West BLT Salad

Mix together, chopped tomatoes, fryed-diced-bacon, shredded lettuce, one large scoop of mayonnaise.  Toss all together & cool.  Eat as is or over toast. This is especial great when the tomatoes are in season.

Now for the funny part.  About a year after Sister Cheryl gave us this recipe she call. Asked what we were doing for lunch and told her making the Famous Cheryl Salad. She had forgot all about it. LOL

HOT Greek Olives

This is one of our very favorite appraisers!!!

In a large sauce pan start with 1 pint mixed Greek olives. We especial like pitted Kalamata olives. Add small drain jar of green olives. 1/2 cup olive oil 2 or 3 Tbls Hot Chinese garlic sauce. Heat/warm the mixture together.
Pour all into serving bowl and toss with big bunch of fresh cilantro. Serve with fresh Cuban bread.

When our friend Frank Edwards daughter was getting married, he was freaking out because both the bride & groom were vegetarians. We made this for him and everybody loved it.

Shrimp in White Sauce w/ Spinach

In a large frying pan 2 Tbls olive oil & garlic & mushrooms cook.
add 1 jar sun dried tomatoes & cook a little more. Next add 1# shrimp (marinade in the secret M&C marinade)  Cook just until pink.

Mean while in a separate sauce pan 1 1/2 pints 1/2 & 1/2, 1 large scoop horseradish & fresh dill. then add 1 Tbls cornstarch & heat to thicken.

Mix frying pan & sauce together & pour over pre cooked pasta twirls. The add 1 bag fresh spinach, stir & cover 10 minutes.

Burnt Lemon Chicken

This is great for big groups!!

Cut 2 whole chickens in half. In a large roasting pan broil 10 minutes skin side down. Then turn over & broil 10 more minute’s. Black Burnt chicken is very good here!!! Cut up into 4-8 pieces per side. Mix together 1/3 cup oil & 2/3 cup lemon juice. Pour this mixture over the cut up chicken.

On top of stove heat up 1/2 cup oil with lots of garlic. The more the better. When garlic is soft like butter  & add 1 1/2 cups lemon juice, 4 Tbls oregano and re heat. Pour this all over the chicken add fresh basil & thin sliced lemons. Toss together & rest for 10 – 20 minutes.

Broil again 10-15 minutes.

Serve with juice poured over chicken.  Believe it or not the burn parts have great flavor!

Angels on Horsebacks

Lay bacon out then press & stretch ( by pulling) with the back of a knife.
.
Take 1 prune & stuff it with a fresh oyster. Then roll in stretched bacon. Tooth pick & broil until brown.

You can also wrap large sea scallops with stretched bacon, tooth pick & broil too!

Scallops with Leeks to Die For!!

We just Loved the Two Fat Ladies!!! Record all the shows and at one time sold all their cook books too!
This is one of their recipes . We first made it in 1998 and are still making it today.

Wash & cut 8 young leeks into strips like pasta.  Steam with 1/2 cup water, 2 Tbls butter and a pich of salt. Save to use as pasta later.

In a large sauce pan cook 4 Tbls butter & 1 chopped onion. then add 3/4 cup dry white wine & 1/4 cup vermouth. Cook down until 1/2 reduced.
.
Add 1-2 lbs scallops ( if you have you can add shrimp & lobster too) cook lightly. then stir in 2/3 cup Heavy cream & serve over the leeks. Top with fresh chopped parsley.

This is truly “To Die For!!!”

Glen’s Sangria

For years our sangria tasted like cheap collage what ever punch. Then Our friend Glen made his & told us the “Shuu Secret!!!”  It’s the Brandy!!!

Here is his Secret Recipe
.
Mix 1 bottle merlot wine
1/4 bottle Burgundy wine
.
 2-4 cups  OJ
 2-4 cups  Pineapple juice
 2-4 cups Apple juice
.
1/2 cup Sugar
4-8 shots Brandy
juice of 1 lime & 1 lemon.
.
Mix all together.
Serve over ice with orange slice & grapes add a splash of club soda!!!
 .
You can change it to white wine for White Sangria just don’t forget the brandy!! LOL

Summer Salad

Arrange on a plate, large sections of tomatoes, avocados, thin sliced Vidalia  onions.
For dressing whisk together balsamic vinegar, olive oil & lime juice.

My Mom’s Favorite Salad

We first had this at the home of Walt & Jack. They were Tampa Gay Pioneers and founders of the MCC Church in Tampa.
In Jack’s recipe it starts… Go out to the back yard & pick a couple grapefruit & oranges.
Peal & section the fruit out into a bowl. We figure about 1 grapefruit & 1/2 orange per person.  Next drizzle with a good amount of olive oil.  The add lots of fresh cracked pepper!! Toss
We only have a grapefruit tree so have made this many times with grapefruit only!
You are not going to believe how good this is!!!
We made this once for Mark’s Mom and she then made it every week.
Jack & Walt were together over 40+ years. Both are now gone but there pioneer work continues in Tampa!

M&C Pasta Tip for 2

Cooking past for two is hard & boring.  Get a large gallon jar or cookie jar. Then go out & pick up several types of pasta. Bow Tie, Spiral, Shells, Twists etc.  Mix them all together.  Then when you want to cook pasta for 1 or 2 scoop out just enough. Remember past doubles in size when cooked. No more wasted pasta.
