Uncle Tom’s Secret Potato Salad

For years Uncle Tom made the very best potato salad & wouldn’t tell me how he did it. Then one night  we had him & Mark over for dinner and served our shrimp scampi. Uncle Tom begged for the recipe. We both agreed but didn’t trust each other. So we wrote the recipes down then meet at the Tiki Bar at SunCoast resort and gave our recipes to the bartender who said they looked right & we traded!!!
Here is the big secret…… mix 1/2 mayo with 1Tbls “Better then Bouillon Chicken Bouillon”
In a large bowl put…
 Cooked cut up potatoes
Chopped Hard boiled eggs
Chopped onion & celery
Chopped parsley
Mix all and enjoy.
My Mom used a similar recipe but would add 1/2 sour cream too.

Ahi Tuna

A server at the now closed “Hops Restaurant” told us how they make this. Break out the big black cast iron frying pan.  Heat it very HOT with 2 -3 Tbls sesame oil.

Pat your tuna steaks into sesame seeds.
.
Fry for 30-45 seconds each side. Do Not over cook and do not cook all the way thru. Remove & cool down.
To serve slice thin and soy sauce dipping sauce.

Beef Burgundy Stew

In a large frying pan 4 Tbls oil & chopped garlic. Brown 2 # cubed beef chuck.  Then remove & put into large kettle add 3 cups burgundy wine, cover & bake 350 degrees 1 hours.

Mix together 1 stick butter & 3/4 cup flour making like a dough.

Sit down & drink a glass of wine.

Back to the frying pan on top of the stove cook onions, celery, carrots then at end add mushrooms.

After the 1 hour of baking remove the kettle from oven. Remove beef then whisk in butter flower dough from above. Put the meat & vegs back into kettle. Add frozen peas & heat just a little more.

Serve with bread & more wine.
